1 lb turkey sausage
3 zucchinis, thinly sliced
1 bunch chopped parsley
1 clove garlic
1 chopped onion
extra virgin olive oil
dried crushed fennel
1 jar tomato sauce
2 cups shredded mozzarella cheese
1 cup crumbled feta cheese
1 cup farmers cheese
salt & pepper to taste
Marinade: parsley, garlic, balsamic vinegar, olive oil and salt & pepper. Brush the sliced zucchini and roast at 425 until golden. Turn, and repeat for second side.
Meanwhile, brown turkey sausage, onion and fennel on stove.
And, mix feta and farmers cheese with an egg in a bowl.
Assembly: when everything is slightly cooled, begin assembling (per video).
Bake for 20 minutes until cheese is bubbly on top.
Make sure to let cool before slicing and serving.
