This is the healthiest tuna salad I know how to make. Apples, onion, peppers, parsley, lemon and salt make this fresh and vibrant tuna salad the healthiest I can think of to make. It keeps for days in the fridge. Easy to pack up for portable lunch too! xoxo, Kristin
You could easily replace the tuna with leftover lean protein or beans.

2 cans solid albacore tuna
4 chopped apples
1/2 red bell pepper, chopped
1/2 bunch parsley, chopped
1/4 red onion, chopped
1 - 3 TBSP lemon juice, to taste
Himalayan Pink Salt, to taste

1. Mix all vegetables in a large bowl.

2. Season to taste with lemon and salt.

3. Flake the tuna and fold into the rest of the salad.

Will keep in refrigerator for a few days. Doesn't get soggy!
