Thyme-Infused Lemon Curd
Makes about 2 cups
Ingredients:

4 large egg yolks

2 large eggs
-
1 cup (200 g) granulated sugar

2/3 cup (160 ml) fresh lemon juice (about 4–5 lemons)

2 Tbsp finely grated lemon zest

4–5 fresh thyme sprigs (or 1 tsp thyme leaves)

1/2 cup (115 g) unsalted butter, cut into cubes
Instructions:

In a medium saucepan, whisk together egg yolks, whole eggs, sugar, lemon juice, and lemon zest until smooth.

Add thyme sprigs to the mixture. Cook over medium-low heat, whisking constantly, until the mixture thickens enough to coat the back of a spoon (about 8–10 minutes). Do not let it boil.

Remove thyme sprigs and discard.

Off the heat, whisk in butter cubes one at a time until fully melted and incorporated.

Strain the curd through a fine mesh sieve into a clean bowl or jar for an extra-smooth finish.

Cover and chill. Lemon curd will continue to thicken as it cools. Store in the refrigerator up to 1 week.
