Serves 1

  • 2 oz chilled jasmine green tea (lightly brewed)
  • 2 oz white grape juice
  • ½ oz fresh lemon juice
  • 2–3 oz sparkling water (or Prosecco for cocktail version)
  • clear ice
  • pinch of sea salt
  • lemon peel

Instructions

  1. Fill a glass with clear ice.
  2. Sprinkle a pinch of sea salt over the ice.
  3. Add jasmine tea, white grape juice, and lemon juice.
  4. Gently top with sparkling water or Prosecco.
  5. Twist lemon peel and place on top.
  6. Do not stir aggressively—keep it clear and layered.

Serves 2

  • 4 oz jasmine tea
  • 4 oz white grape juice
  • 1 oz lemon juice
  • 4–6 oz sparkling water or Prosecco

Serves 6–8 (small gathering)

  • 12 oz jasmine tea
  • 12 oz white grape juice
  • 3–4 oz lemon juice

To serve:

  • Add 4–5 oz of the base to each glass over ice
  • Top individually with sparkling water or Prosecco

🍢 Sea Glass Skewers

Clean, geometric bites with soft coastal tones.

Serves 1 (3 skewers)

  • 6 pear cubes (peeled)
  • 6 white cheddar cheese cubes
  • 3 honeydew cubes
  • pinch of sea salt

Assembly (per skewer)

pear → cheddar → honeydew → pear → cheddar → honeydew

Instructions

  1. Cut all cubes to uniform size (about ½ inch).
  2. Pat fruit dry to keep edges clean.
  3. Thread in symmetrical order.
  4. Keep alignment straight and tight.
  5. Sprinkle with a light dusting of sea salt to bring out the sweetness of the fruit.

🧀 Goat Cheese Silk with Sea Glass Grapes

Soft, airy, and luminous—this is the quiet contrast to the structured skewers.

Serves 1 (2–3 crostini)

  • ¼ cup goat cheese
  • 1–2 tbsp cream (or milk)
  • 2–3 thin slices green grapes per piece
  • 2–3 pale crostini
  • optional: pinch flaky sea salt

Instructions

  1. Whip goat cheese with cream until completely smooth.
  2. Spread thinly and evenly onto crostini.
  3. Top with 3 overlapping thin grape slices.
  4. Keep surfaces clean and minimal.
  5. Sprinkle with a light dusting of sea salt to bring out the sweetness of the grapes.

Serves 2 (4–6 crostini)

  • ½ cup goat cheese
  • 2–3 tbsp cream
  • 12 – 18 grape slices

Serves 6–8 (12–18 crostini)

  • 1½–2 cups goat cheese
  • ¼–⅓ cup cream
  • 36 – 54 grape slices

👉 Assemble just before serving to keep grapes translucent and fresh
