How to Make Crunchy, Roasted Garbanzo Bean Snack for Holiday Gifts

Handmade holiday gifts have been a passion of mine my whole adult life. I often combine several gifts in a basket. Sometimes the theme is healthy, or budget, or 'letting the clutch out' as I lovingly refer to decadent treats.

This particular recipe is healthy and budget friendly, and that salty crunch even satisfies the snack cravings we all get :) For a party or get together, place a bowl of these in the center of the gathering. As a food gift for a basket, fill a cello bag and cinch the top with a themed sticker or ribbon.

You can use canned beans for this recipe, but it is cheaper and healthier to start with dried beans. Just make sure the beans are cooked and dried before roasting.

There are endless possibilities for flavor profiles for this delicious snack. You could use an Asian, Mexican, Italian, Moroccan or Indian flavor profile, or even create your own. In this recipe, I used garlic, lemon zest, cayenne, salt and pepper because we are such garlic and lemon lovers in my house!

If you have an InstaPot, dried beans are incredibly easy and quick to prepare! Rinse the beans and add to the InstaPot. Cover with water. Set them to cook on the bean setting for 40 minutes and let the pressure release naturally.

What you will need:
4 cups cooked garbanzo beans (chickpeas), rinsed and dried (approx 4 cans or 1/2 lb bag)
4 TBSP extra virgin olive oil
2 cloves minced garlic
zest of 1 lemon
1/2 tsp cayenne pepper
salt & pepper to taste

Instructions:

1. Preheat oven to 450 degrees

2. Gently toss the beans with the remaining ingredients in a large bowl.

3. Pour the mixture evenly over a baking sheet in one layer.

4. Bake in the oven for 50 minutes, stirring halfway through.

5. Let cool completely. They get crunchier when they cool off.
