When Periscope first came out, a friend of mine suggested I take a look at it. I didn't think it was something I wanted to pursue professionally but I did get some good ideas from it.
I watched a healthy cooking video for making a healthy version of candied popcorn using protein powder. The couple used a sweetener I had never heard of before: VitaFiber. It is a liquid sweetener, similar to the consistency of corn syrup but much healthier for you. Its a prebiotic, low sugar, high fiber, and you can learn more about it here:
In the video they mixed protein powder with the VitaFiber and poured it over store bought bagged popcorn (Skinny Pop) I think. Was it a good idea? Absolutely! But could I make it healthier and cheaper? Yes :) And they just ate it sticky and I thought I could make it better by adding a few extra ingredients and baking it to adhere the coating better to the popcorn.
I have always been a big fan of air-popped popcorn. Not because I don't like seasonings, but I prefer to do it MYSELF! A bottle of popcorn kernels costs a fraction of pre-made popcorn and has NONE of the sodium, fat or chemicals.
Use any flavor of protein powder you like. I'm sure a caramel flavor would be divine! I used chocolate and added cocoa powder to fortify the chocolate-y goodness. And I always add vanilla extract when I bake with protein powders to give a depth to the flavors.
Chocoate Protein Powder Popcorn FREE Recipe by Kristin Omdahl
6 cups air-popped popcorn
3/4 cup liquid sweetener (I used VitaFiber)
3/4 cup protein powder, (I used chocolate)
2 tsp cocoa powder
1 tsp vanilla extract
1/2 tsp Himalayan Pink Salt
